The Tuna Route covers the coastal towns of southern Cádiz — Barbate, Zahara, Conil, Tarifa — where the almadraba keeps alive one of the oldest fishing traditions in the Mediterranean. Every spring, bluefin tuna cross the Strait heading to their spawning grounds, and for centuries they have been caught using a net system designed to respect the animal's behavior.
During the season, local restaurants offer bluefin tuna in all its possible preparations: tartare, tataki, sashimi, grilled loin, with onions, mojama, or ventresca. Some establishments offer specific tasting menus that explore the fish from head to tail.
The main season runs from April to June, when gastronomic routes and events are held in the various towns. Book in advance: spots fill up quickly.
The Tuna Route is not just about gastronomy: it's a journey through a fishing tradition that has defined the economy and culture of southern Cádiz for centuries.
